The normal color of probiotic powder is white. Slight pink or yellow shades in probiotics are normal and are not correlated to loss of viability of the bacteria. A pink to red color is due to oxidation of ascorbic acid. The rate of discoloration is dependent on the level of oxygen, moisture content, ascorbic acid concentration and temperature.
A yellow to brown colour is due to a Maillard reaction. The rate of the discolouration is dependent on temperature, moisture and a complex effect of constituents. Viability in probiotic products is negatively affected by elevated temperatures, exposure to oxygen and moisture. However, discoloration can be a sign of decreasing viability, but it is not a prerequisite for viability loss.
